I really think I am making this much harder than it should be

Hello!! Ok I don't know why but I am hitting a road block with each of these maps. I will write out what I am trying to do and if someone out there could please explain each of these steps like I'm 5 and be my savior I would be so extremely grateful, I really think I am making this more difficult than it should be:

I would like to map food deserts in Dallas. Here are the specific features I would like to map (each on their own map):

1. A map portraying poverty rates in Dallas: I would like to have a map of Dallas divided up into what I think are referred to as census tracts. I would then like to color each census tract with different shades of the same color, with darkest shades representing areas with the highest percentage of inhabitants living below the poverty line

2. A map of Dallas portraying access to bus stops by poverty rate: I would like to portray walking accessibility to city bus stops, which is defined by distances less than approximately 1,640 feet (or 500 meters). The size of the circles increase with degree of inaccessibility, with red circles represents tracts lacking walking access to bus stops, on average by census block.

3. 2 maps, one of Dallas fast food restaurants and one of Dallas grocery stores: I would like to do a similar thing with these maps as I did for 2, portraying walking access to grocery stores and restaurants, still defining by distance of 1,640 ft (500 m) and I would like the size of the circle on each census tract to represent the average distance to the nearest supermarket or fast food restaurant from the census blocks within that tract. Then I would like to have circles colored green that denote that at least one store is within walking distance for tract residents, on average, while a red circle represents that there is not a restaurant or store within walking distance.

4. Then a simple bus route/bus stop map of Dallas where a point represents a bus stop and a route is represented by a line of some sort.

If someone could walk me through where to obtain the data needed and how to display it in these ways I would be eternally in your debt. Thank you in advance!
